Oaxacan Old‐Fashioned
- 2 oz Penumbra Mezcal
- 0.25 oz Agave Syrup (1:1)
- 2 dashes Blackstrap Bitters
- 2 dashes Chocolate Mole Bitters (optional)
Build in a mixing glass. Stir with ice until well-chilled. Strain over a large rock in lowball glass
Garnish: Expressed orange peel

Luna Oscura
Mezcal Margarita
- 2 oz Penumbra Mezcal
- 1 oz fresh lime juice
- 0.75 oz dry curaçao
- 0.25 oz agave syrup (1:1 water to agave)
- 3-5 dashed blackstrap bitters
- 3 drops saline solution (10:1 water to salt)
Shake hard with ice. Strain over fresh ice in a double old fashioned or coupe glass
Garnish: Black salt rim and torched lime wheel

Oaxacan Penicillin
- 1.75 oz Penumbra Mezcal
- 0.75 oz fresh lime juice
- 0.75 oz fresh pineapple juice
- 0.5 oz fresh ginger syrup
- 0.25 oz agave syrup (1:1 water to agave)
Shake hard with ice. Strain over fresh ice in a double old-fashioned glass.
Garnish: Chipotle dust, pineapple wedge and candied ginger spear

La Penumbra Tonica
Mezcal & Tonic
- 1.5 oz Penumbra Mezcal
- 1 oz fresh grapefruit juice
- 0.5 oz fresh lime juice
- 0.5 oz Aperol
- 0.25 oz agave syrup (1:1 water to agave)
- Top with 2–3 oz quality tonic
Quick shake to incorporate ingredients. Strain into a highball glass with ice. Top with tonic and gently stir.
Garnish: Grapefruit peel ribbon and fresh rosemary sprig

La Luz
Mezcal Martini
- 2.5 oz Penumbra Mezcal
- 0.75 oz Lillet Blanc
- 4–5 drops saline solution (10:1 water:salt)
- 1 dash orange bitters (optional)
Stir with ice until chilled. Strain into a frozen Nick & Nora or martini glass.
Garnish: Expressed lemon twist
